Ingredients
Salad
- 3 to 4 handfuls baby spinach 
- 1 red apple thinly sliced
- 1 green apple thinly sliced
- A handful of roasted blanched almonds 
- 100g feta cheese 
- 1/3 cup cranberries 
Dressing
- 2 Tbsp pomegranate balsamic vinegar 
- 2 Tbsp extra virgin olive oil 
- 2 Tbsp honey 
- A pinch of black pepper 
Method

Slice apple thinly and squeeze over lemon juice to stop browning.

On a platter layer spinach, cranberries, nuts and cheese.

Combine the dressing ingredients and pour over salad just before serving
